Have you noticed that soup stays hot much longer than eba? That is because water (in the soup) has a high Specific Heat Capacity.

It takes a LOT of energy to heat water up, but once it is hot, it holds onto that energy for a long time. This is why water is used to cool car engines—it can absorb a lot of heat without boiling over immediately.
